
Chocolate Chip Muffins– these are a huge hit in our home. The grandkids especially love these!
preheat oven to 400 degrees. Line every other muffin tin with a liner.
Ingredients:
Combine in a bowl…
1 1/2 cup all flour
3/4 cup light brown sugar
1/2 tsp salt
1 1/2 tsp baking powder
1/2 tsp baking soda
Lightly whisk all these ingredients together until blended.
In a separate bowl, combine:
1/3 cup veg oil
1 large egg
1/3 cup milk
1 teaspoon vanilla extract
1/2 cup sour cream
Add the wet ingredients to the dry and combine JUST until moist. Overstirring can result in heavy tasting muffins and flatter tops.
stir in 3/4 cup chocolate chips. Fold in until just combined, being sure not to overstir again!
Fill muffin liners 3/4 full. I like to do every other muffin tin and fill the others about 1/2 full with water. This adds a little moisture to the over while baking resulting in more even baking and a less dry finished product.
Bake at 400 degrees for 15-20 minutes. until tops are golden brown. Remove from tins immediately to cool.
