Chaffles
Hubby was on a keto diet for 12 weeks and now maintains a very low net carb diet. He enjoys finding foods that are easy to make, so he can meal prep for himself and take that load off my plate, and that taste great too. A dear friend of ours gave us a recipe for chaffle’s. I’m honestly not sure where she got the recipe so I cannot give credit to the creator but from internet searches, its a pretty basic recipe. You can use them as “bread” to make sausage and egg rollsups, make peanut butter sandwiches, burger buns,…the possibilities are endless. BEST PART- these are 100% gluten free!!! Ingredients:
3 large eggs
1 cup any shredded cheese. we like mozzarella
1/4 almond flour
1/2 tsp baking powder
Combine all ingredients in a bowl. Preheat waffle maker per manufacturers directions. Once heated, lightly spray machine with cooking oil/butter spray. Add 1 large tablespoon of mix to center of waffle machine. Close machine and allow to cook 2-3 minutes or until machine stops steaming.
Open machine and remove chaffle from machine with a fork. Continue til all mixture is used. Makes approx 6 chaffles using the Dash mini waffle maker. If you want it crispy, toast it after, otherwise its softer, like a waffle.
Fun add-in ideas, blueberries, choc chips, ham, bacon bits, spinach.
These freeze great and are easy to reheat by popping them in the toaster, toaster over, air fryer, over etc. I do not recommend the microwave, they tend to get a bit soggy.
