Gluten Free Zucchini Bread

3 eggs

1/2 cup honey

1 tsp baking soda

1 tsp baking powder

1 tsp vanilla

1/2 tsp cinnamon

1/4 tsp salt

1 cup of grated zucchini

3 1/3 cups almond flour

Preheat oven to 350 degrees and line a 9x 5 loaf pan with parchment paper. Spray well with cooking spray. Grate zucchini, squeeze gently to get rid of most of the liquid and set aside.

In a large mixing bowl combine eggs, honey, baking soda, baking powder, vanilla, cinnamon, salt. Combine well. Add in zucchini and almond flour, I like to use Blue Diamond brand found here . Be sure to use leveled cups of flour. Mix gently with a spatula to combine.

Pour batter into prepared loaf pan and bake 50 minutes or until toothpick inserted comes out clean. Remove from oven and transfer to cooling rack. Cool at least 30-60 minutes before eating.
